  IMG_0000.jpg - This is a bowl of pho made from chicken, "Pho Ga." It's a popular variation of the classic Pho. Each of the 3 regions of Vietnam has its own unique noodle soup. Pho originated from the north. The central highlands has a wonderful spicy noodle soup called Bun Bo Hue. The south has its "Hu Tieu". But as the picture shows, there are many variations among each of the dishes. The recipe here is pretty much the classic Pho as I grew up eating (albeit in Saigon, south Vietnam).
