  IMG_0110.JPG - The cooked chuck and oxtail meat is sliced up. In Vietnamese, this is "thit chin", i.e., "cooked meat." The classic Vietnamese Pho has at least both "thit chin" and "thit tai." There are other additions such as meat balls, tripes, etc. I personally prefer just these two in my Pho.
